Home-made Tocino Rice Topping

#Wellnessize your own tocino by leaving out the curing salts and adjusting its sweetness to suit your taste.

  • Prep Time: 15 minutes plus 30 minutes to marinate pork

INGREDIENTS

1 kg pork loin, sliced thinly
2 tbsp chopped garlic
¼ cup vinegar
juice of 5 calamansi
2 8g MAGGI MAGIC SARAP
½ cup brown sugar
salt and pepper to taste
cooking oil for frying
steamed rice

For egg, tomato and onion salsa: Combine –
2 salted eggs or hardboiled eggs
3 tomatoes, chopped
1 onion, chopped

PROCEDURE

  1. Marinate pork in garlic, vinegar, calamansi juice, MAGGI MAGIC SARAP, sugar, salt and pepper for at least 30 minutes. Set aside in the refrigerator until ready to cook.
  2. Heat oil and fry marinated pork until golden brown. Transfer on a plate lined with paper towels to drain excess oil.
  3. To assemble, top cooked rice with the prepared pork tocino and serve with egg, tomato salsa on the side.
