INGREDIENTS

1 ½ cups all-purpose flour
¾ tsp baking soda
1 tsp baking powder
¼ tsp salt
½ cup butter, softened
¾ cup sugar
2 eggs
¾ cup crushed pineapple
¾ cup mashed banana
¼ cup NESTLÉ Sour Cream

for Topping:
½ cup chopped caramelized walnuts
1 cup crushed pineapple

PROCEDURE

  1. Preheat oven to 350F. Grease and line muffin pans with foil.
  2. Sift together dry ingredients.
  3. Using an electric mixer, cream butter and sugar until light. Add eggs one at a time, mixing well after addition
  4. Add crushed pineapple, mashed bananas and NESTLÉ Sour Cream. Fold in dry ingredients.
  5. Fill muffin pans with batter ¾ full.  Bake for 15-20 minutes or until toothpick inserted in the center comes out clean. Set aside to cool. Top with caramelized walnuts and more crushed pineapple if desired.
