Eggplant Topped Spaghetti

INGREDIENTS

5 eggplants, cut into half then into half-moon pieces
1 sachet MAGGI MAGIC SARAP 8g
1 cup all-purpose flour
1 cup cooking oil
Ingredient for Sauce:
1 tbsp olive oil
¼ cup minced garlic
1 medium onion, chopped
1 ½ cup canned diced tomatoes
½ cup water
1 sachet MAGGI MAGIC SARAP 8g
Pepper and sugar to taste
¼ cup basil, chiffonade
½ cup grated Parmesan cheese
400g cooked spaghetti

PROCEDURE

  1. Rub eggplant with MAGGI MAGIC SARAP. Dredge with flour the marinated eggplant and shake excess flour before frying.  Heat cooking oil and fry prepared eggplant until golden brown and crispy. Set aside.
  2. Heat 1 tbsp cooking oil. Stir-fry garlic, onion and canned tomatoes. Cook until fragrant.
  3. Pour water and bring to a boil. Season with MAGGI MAGIC SARAP, pepper and sugar.
  4. Stir in basil and Parmesan cheese. Remove from heat.
  5. To assemble: Put Pasta in a platter. Pour prepared sauce over spaghetti and top with fried eggplant. Garnish with more Parmesan cheese on top if desired.
