Mommy Recipe: Banana Granola Oatmeal Cookies

How a mom went from newbie baker to pastry master

Mommy Janelle Barretto Squires has always been interested in the culinary arts, but her passion for baking only bloomed when she became a mother to two lovely girls. Janelle developed her baking skills further at her daughters’ school fairs where bake sales were popular. She noticed that most moms had their own special recipe and realized that she had to have a one that would tell her family’s story.

To keep her kids’ diet full of nutrients like fiber, potassium, Vitamin A and C, Janelle made banana a staple household fruit. She uses it as one of her main ingredients to #WELLNESSIZE her cookies while giving it a touch of home. To #WELLNESSIZE means to take tiny steps to making healthier choices and improve wellness.

Banana Granola Oatmeal Cookies

Ingredients:

1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
1/4 tsp nutmeg
1/2 cup butter, softened
1 cup brown sugar
1 large egg (at room temperature)
1 tsp almond extract
1 cup mashed ripe bananas
1 cup Nestlé Fitnesse granola cereal
1 cup quick cooking oats
1/2 cup chopped walnuts or almonds
1 cup dried cranberries or raisins
1 cup chocolate chips (optional)

Procedure:

  1. Preheat oven to 375 ° F (190 °C).
  2. In a medium bowl, whisk together the dry ingredients (all-purpose flour, baking soda, salt, cinnamon and nutmeg).  
  3. In the bowl of a stand mixer, mix together butter and brown sugar on medium speed until fluffy (around 2 minutes).
  4. Add the egg, mashed banana and almond extract and beat for around 30 more seconds.
  5. Reduce speed to low and slowly add flour mixture until just combined. Don't overbeat.  
  6. Add granola, oats, walnuts, cranberries/raisins and chocolate chips (if using), and mix by hand with a wooden spoon or firm spatula.
  7. Using a small ice cream scoop or round tablespoon, drop dough on a prepared cookie sheet (either with cooking spray or lining with nonstick baking paper) 1.5 - 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes, or until sides are golden.
  9. Cool for 2 minutes on the baking sheet, then transfer to a cooling rack to cool completely.
  10. ENJOY!
